English-Muffin Egg Pizzas


  • 4 English muffins
  • Olive oil
  • Oregano
  • Kosher salt
  • Tomato slices
  • 2 hard-boiled eggs


  1. Make 2 hard-boiled eggs
  2. Cut your 4 English muffins into halves, toast and place on a cookie sheet.
  3. Mist with olive oil and layer on tomato slices and hard-boiled egg slices with a little of grated mozzarella, sprinkled with oregano and salt.
  4. Bring into boil for 5 minutes or until cheese melts.

Egg-Mushroom Salad


  • Hard boiled eggs
  • 2 cups of mushrooms
  • 1 cup chopped onion
  • 1/3 cup olive oil
  • 3 tbsps. Cream sour cream
  • Chopped parsley and pepper


  1. Make hard-boiled eggs
  2. Chop and slice 2 cups of mushrooms and 1 cup of onion in 1/3 cup of olive oil.
  3. Mix all with the eggs, 3 tbsps. Sour cream, chopped parsley, salt and pepper.

Loaded Scrambled Eggs


  • 8 large beaten eggs
  • 1 chopped red onion
  • 2 tbsps. Olive oil, kosher salt and black pepper
  • 1 cup halved cherry tomatoes
  • 3 ounces grated cheddar
  • 1/3 finely chopped flat-leaf parsley leaves
  • Crusty bread


  1. Heat the olive oil in a large nonstick skillet over medium heat. Add the onion, bell pepper, 1 teaspoon salt, and ½ teaspoon pepper. Cook, stirring occasionally, until very tender, 12 to 14 minutes.
  2. Add the eggs and cook, stirring frequently, until the eggs are just set, 1 to 2 minutes. Add the Cheddar and cook, stirring, until just melted, 1 to 2 minutes more.
  3. Remove from heat and stir in the tomatoes and parsley.
  4. Drizzle the bread with oil and serve alongside the eggs.
